1. Spring Vegetable Stir-Fry

Light, colourful, and super quick!

Ingredients:

  • 1 cup snap peas
  • 1 cup asparagus (cut into 1-inch pieces)
  • 1 cup carrots (julienned)
  • 1 cup broccoli/cauliflower
  • 1 bell pepper (sliced)
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tbsp fresh ginger (grated)
  • Sesame seeds (for garnish)

Instructions:

  1. Heat olive oil in a pan over medium-high heat.
  2. Add ginger and stir for 30 seconds.
  3. Toss in all the veggies and stir-fry for 4–5 minutes (they should stay a little crunchy).
  4. Add soy sauce and sesame oil; toss to coat.
  5. Garnish with sesame seeds and serve hot over brown rice or quinoa!

 

 

2. Strawberry Spinach Salad

Sweet, tangy, and totally refreshing.

Ingredients:

  • 4 cups baby spinach
  • 1 cup strawberries (sliced)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup feta cheese (crumbled)
  • ¼ cup pecans (toasted)

Dressing:

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt & pepper to taste

Instructions:

  1. Whisk dressing ingredients together.
  2. Toss spinach, strawberries, onion, feta, and pecans in a large bowl.
  3. Drizzle dressing over the salad just before serving.

 

 

3. Lemon Herb Grilled Chicken

Perfect for outdoor grilling days.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • Salt & pepper

Instructions:

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
  2. Marinate chicken in the mixture for at least 30 minutes (or overnight for extra flavour).
  3. Grill over medium heat for 6–7 minutes per side or until fully cooked.
  4. Serve with a side of grilled veggies or a green salad.
