Ingredients:
- 1 cup snap peas
- 1 cup asparagus (cut into 1-inch pieces)
- 1 cup carrots (julienned)
- 1 cup broccoli/cauliflower
- 1 bell pepper (sliced)
- 2 tbsp olive oil
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 tbsp fresh ginger (grated)
- Sesame seeds (for garnish)
Instructions:
- Heat olive oil in a pan over medium-high heat.
- Add ginger and stir for 30 seconds.
- Toss in all the veggies and stir-fry for 4–5 minutes (they should stay a little crunchy).
- Add soy sauce and sesame oil; toss to coat.
- Garnish with sesame seeds and serve hot over brown rice or quinoa!

Ingredients:
- 4 cups baby spinach
- 1 cup strawberries (sliced)
- ¼ cup red onion (thinly sliced)

Dressing:

- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt & pepper to taste
Instructions:
- Whisk dressing ingredients together.

- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil

- In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.

- Grill over medium heat for 6–7 minutes per side or until fully cooked.
