A good vegan mayo is one of our weekly staples - it’s just so good on everything, and this CBD infused version, is even better. Perfectly creamy, thick, and tangy!
Preparation time: less than 30 mins
Cooking time: no cooking required
Serves: Makes 300ml
INGREDIENTS
For the mayo
- 3 tbsp aquafaba (brine from a can of chickpeas)
- 2 tsp Dijon mustard
- ¾ tsp salt
- ¼ tsp fine white pepper
- 2 tbsp white wine vinegar
- 250ml/9fl oz neutral oil, such as vegetable oil
- 2-3 droppers of Celtic Wind’s CBD oil of your choice - please do not exceed the daily recommended dose
METHOD
- For the mayo, put all the ingredients in a jug and blend using a stick (immersion) blender until thick and creamy - about 10 seconds.
- Store in an airtight container in the fridge (it will keep for about 2 weeks).
