Stuffed Jack-O'-Lantern Orange Peppers

This simple and healthy Halloween recipe is a festive treat that’s both nutritious and fun. Made with bell peppers carved like pumpkins and filled with a wholesome mixture of quinoa, beans, and veggies, it’s perfect for a seasonal celebration. A delicious way to enjoy Halloween without the sugar overload!

Ingredients:

  • 4 orange bell peppers (for a pumpkin-like look)
  • 1 cup cooked quinoa or brown rice
  • 1 cup black beans (drained and rinsed)
  • 1/2 cup diced tomatoes
  • 1/2 cup corn (fresh or frozen)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. Preheat Oven: Set to 375°F (190°C).
  2. Prep the Peppers: Cut off the tops of the bell peppers and remove the seeds. Use a small knife to carve fun Jack-O'-Lantern faces on each pepper.
  3. Make the Filling: In a bowl, mix the quinoa (or rice), black beans, diced tomatoes, corn, cumin, chili powder, salt, and pepper.
  4. Stuff the Peppers: Spoon the filling into each pepper. Top with shredded cheese if desired.
  5. Bake: Place the stuffed peppers in a baking dish, drizzle with a bit of olive oil, and cover with foil. Bake for 25-30 minutes, until the peppers are tender.
  6. Serve: Remove from the oven and let cool slightly before serving.
