Chickpea and Avocado Salad
Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Optional: chopped parsley or cilantro
Instructions:
- In a large bowl, combine chickpeas, avocado, tomatoes, and cucumber.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and gently toss.
- Garnish with fresh herbs if desired. Serve immediately.
Cold Cucumber Soup
Ingredients:
- 2 large cucumbers, peeled and chopped
- 1 cup plain Greek yogurt
- 1 small garlic clove, minced
- 1 tbsp fresh dill (or 1 tsp dried)
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
- Add all ingredients to a blender. Blend until smooth.
- Taste and adjust seasoning if needed.
- Chill in the fridge for at least 1 hour.
- Serve cold, optionally garnished with dill or a drizzle of olive oil.
Tropical Smoothie Bowl
Ingredients:
- 1 cup frozen mango chunks
- 1/2 cup frozen pineapple chunks
- 1 frozen banana
- 1/2 cup coconut water (adjust for desired thickness)
Toppings:
- Chia seeds
- Coconut flakes
- Fresh berries or banana slices
- Granola (optional)
Instructions:
- Blend mango, pineapple, banana, and coconut water until thick and smooth.
- Pour into a bowl and smooth the top.
- Add desired toppings in rows or clusters.
- Enjoy immediately with a spoon!
